Incredible Homemade Caramel Corn

Are you ready for the best homemade treat… ever? The kind that makes your guests want to come back and your children behave? Introducing “Camilla Corn,” real caramel paired with real popcorn.

Fresh popcorn: At our house we keep an air popper in the cabinet. Fresh popcorn can be made anytime, and makes a great snack for the children and adults, too, and I absolutely love dousing it with REAL butter and herbs. 1/3 cup of popcorn kernels makes about 16 cups of fresh popcorn. Plus, don’t forget, the microwavable popcorn bags come with some of the most toxic ingredients on my list. Yuck!

Dulce de Leche caramel sauce: Our goat Camilla gives us a really special treat when we use her fresh milk to make Mexican caramel sauce, called “Cajeta” or “Dulce de Leche”. Its a simple, but long process of heating the milk with sugar to get a very rich, deep and pure caramel flavored sauce. Our herd owners are very grateful when Camilla allows us to share this special treat.

This recipe can also be made with a can of sweetened condensed milk. I’ve never made it that way, but it’s probably pretty easy.

Nuts: Peanuts are a good choice, but I like to put a mixture of nuts that my children wouldn’t normally eat. For this batch: walnuts, cashews and macadamia nuts. I rough chopped mine and added the big chunks as well as the powdery stuff to my mixture. You could also chop up some almonds and put them in a frying pan for a couple minutes, which brings out a great toasty flavor.

Double It: This recipe is very easy to double, and yields enough to take to potlucks, parties, etc.

Get Creative: You could easily throw in other ingredients to this recipe, from colored candies to mini marshmallows, chocolate and white chocolate drizzle. Let your children help and get creative!

“Camilla Corn”

  • nonstick cooking spray
  • 8 cups air-popped popcorn
  • 1/2 cup Dulce de Leche (Goat's Milk Caramel, also called Cajeta)
  • 1/2 cup peanuts or mixed nuts
  • 1/2 teaspoon salt


  1. Preheat oven to 300, line a baking tray with foil and spray with cooking oil
  2. Pre-mix the chopped nuts and popped popcorn in a large bowl
  3. Heat the caramel over low-medium heat until hot and beginning to bubble. Take it off the heat.
  4. Pour the caramel over the popcorn mix, stirring quickly and thoroughly.
  5. Pour the mixture onto prepared baking sheet in a single layer. Sprinkle with salt.
  6. Bake the mixture for 8 minutes, stir, and bake for another 5-10 minutes, or until the kernels become crunchy. Sprinkle with more salt to taste.
  7. Let it cool completely before breaking it apart. Eat! YUM!!
